CRANBERRY JELLO SALAD


Cranberry Jello Salad:
One large pkg Raspberry Jello 
About ¾ pkg fresh cranberries
1/3 to ½ C. sugar
Fresh orange zest to taste 
Small Apple, diced
Small Orange, diced
Perhaps ½ C. or more canned crushed pineapple, very well-drained

Chop up fresh cranberries in a food processor or immersion blender. Add sugar to cranberries and set aside. Zest orange, dice apple and orange, drain the pineapple, set aside. Add jello powder to a large bowl or 9 x 11 pan. Add the hot water like the jello box requests then 1/4 less of the cold water requested. Stir as instructed on the jello box. Add the cranberries, orange zest, chopped apples, chopped oranges, and pineapple to the jello and stir. The jello should be quite packed. Refrigerate overnight.
